I canned 2 batches of strawberry jam, both using pomona pectin. The first used 1 cup of sugar, the 2nd 1/2 cup of honey.
The sugar batch came out nice, you can really taste the strawberries now. The flavor is not overwhelmed by the sugar.
The honey batch is smooth, you can taste both the honey and the strawberries. They both turned out good.
I also canned some peaches that Mom gave me. Found a recipe on the TSP forum for 'Honey Canned Peaches'. Canning was not to hard, not tasted it yet. I'll give the peaches away to others to review the flavor. No one at home likes them.
